Cheesy Potatoes

1 lb hash browns, frozen
1 lb sour cream
1 can cream of chicken soup
1 pkg shredded cheddar cheese
1 stick butter
1/2 onion–chopped
salt and pepper
Cornflakes

Combine all ingredients and top with a layer of crushed cornflakes in a 9×13 pan. Cover with aluminum foil and bake at 350 for an hour and a half. Continue to bake until nice and bubbly and top is browned slightly. It is better to overbake a bit to ensure that the flavors have mixed throughout the pan.

White Clam Chowder

3 sticks butter
Onions
Celery
3-4 large potatoes, boiled
50 oz canned chopped clams
50 oz canned clam juice
1 c mashed potato flakes
1 quart half and half
Black pepper
Hot sauce

Melt butter. Sauté onions and celery in butter until translucent. Dice potatoes and add to kettle. Add in chopped clams and clam juice. Heat until ready to boil. Turn off the fire and thicken with potatoes flakes. Stir and let sit for five minutes, then add more flakes so the mixture is very thick. Boil half and half in the microwave and add until the chowder is at the thickness that you like. Spice with black pepper and tobasco as desired.

Classic Corned Beef Dinner

1 corned beef brisket or rump
1 small onion
1 bay leaf
½ t whole cloves
4 peppercorns
2 stalks celery, with leaves
6 large carrots, pared
6 potatoes, pared
1 medium head green cabbage, quartered

Place brisket in a deep kettle, add cold water just to cover. Add onions, bay leaf, cloves, peppercorns, and celery. Cover, bring to a boil, reduce heat and simmer 4 hours or until almost tender. About 45 minutes before meat is done, remove and discard onion and celery. Skim excess fat from liquid. Add potatoes and carrots, simmer 15 minutes, add cabbage quarters and simmer an additional 30 minutes, until all vegetables are tender-crisp. Serves 6.

Hashed Brown Potatoes

Cut cold boiled potatoes up in small cubes.  Fry little bacon, remove and cut up small.  Heat potatoes in the bacon grease, add some onion and bacon pieces and brown and put in a little sweet cream.  Then cover and put in oven for a little while.  Serve hot with meat of any kind.
